Avocado Smoothies

I saw this recipe a while back in Family Fun magazine and have been wanting to try it.  So, today, I broke out the blender and gave it a whirl.  I added one peeled, pitted avocado, 1 cup milk, about 4 ice cubes, 2 Tbsp sugar, and 1/2 Tsp vanilla.  Blend away!  The recipe said it made 3 servings but was really more like 2 (maybe 3 child size servings).  It was really good.  2 of my kids didn't like it that much but they don't really like avocados (the other 2 thought it was very yummy).  I think it would be better with just a touch more sugar and vanilla but it was still great-very smooth and creamy.  Avocados are so good for you too.   Avocados provide nearly 20 essential nutrients, including fiber, potassium, Vitamin E, B-vitamins and folic acid. They also act as a "nutrient booster" by enabling the body to absorb more fat-soluble nutrients, such as alpha and beta-carotene and lutein, in foods that are eaten with the fruit.
