Barbecue Baked Potatoes

Ok, if you live in the South, then you have probably had this but for those of you who haven't, this is sooooo good!  & for those of you who refer to an outdoor grill as a barbecue, I am talking about the meat, barbecue, as in pork.  You start with a boston butt.  Roast it in the oven for about 4-5 hours.  You can baste it, put a rub on it, or put whatever seasonings you like on it-doesn't matter cause it's gonna be good.  After it's done, you take it out and the meat should be practically falling apart.  This is what is known as pulled pork.  You can then break it all apart and chop it up.  Now, sometimes I make a homemade barbecue sauce but this particular time, I wanted to just get done, so I put equal parts Kraft Barbecue Sauce & Mrs. Griffins Barbecue Sauce over it and mixed it all up until all of the meat was thoroughly saturated in it.  These two sauces combined give you the perfect blend of smoky and tangy flavor.

You see those potatoes there next to my meat-well, I washed those and pricked them with a fork and put them in the microwave for @ 20 minutes.  Sure, I could've really baked them in the oven but, like I said, I wanted to get it done.  Slice your potatoes open and add the toppings (butter, sour cream, chives, ranch-whatever it is you like).  Now, for the most important part: Put the barbecue on top of the potatoes.  That's right, you heard me.  Put the barbecue on top of the potatoes.  Then, if you like, put cheese on top of that.   I luv these!  It is hard to describe what this is like but I suppose it is similiar to having chili cheese fries.  We have a family of 6 and we ate this for dinner and had enough meat leftover the next day for sandwiches.  I served it with baked beans and while I was preparing the barbecue I had this in the oven:
I love pumpkin pie!  It just screams Fall.  Linking up to:
