More Cake Batter Sandwich Cookies

Do you remember a while back when I made these cake batter sandwich cookies?  Well, today, as I was bloghopping around, I found these cupcake poppers over at Crazy Domestic.


Aren’t they cute?  She used mini cupcake tins and neon food coloring added to regular white cake mix and frosting.  Tomorrow is my little girl’s 6th birthday and I have to take something to her class tomorrow and thought these would be PERFECT!  Kids love cake, cookies, frosting, and bright colors!

I didn’t have any mini cupcake tins so I just improvised (as usual).  Hers are more perfectly rounded and small  but thick like a cupcake while mine are more spread out and flat like a cookie and larger like a whoopie pie.  I mixed my cake batter according to the directions then separated it out into 1/4ths and added about 8 drops of neon food coloring to each bowl.  Then I dropped spoonfuls of batter onto a cookie sheet and baked for 10 minutes at 350 degrees.  I separated my frosting and colored the same way and just spread frosting in between each cookie to make a sandwich. 


I love how bright and cheerful they are (just like my daughter).  I hope her class likes them!
